Our Hojiblanca Extra Virgin Olive Oil - What to Expect

Our olive oil comes from a small, single parcel of land in Andalucía, Spain. Like a fine wine, its taste and character are deeply shaped by our soil, climate, and unique geographic and topographic setting.

Each harvest is naturally different. Rainfall, temperature, and harvest timing all influence the final expression of the oil, giving every vintage its own personality. We do not blend our oil with others — this allows us to maintain full control over quality and offer complete traceability from grove to bottle.

While we embrace the natural variation that each season brings, the following tasting notes are intended to give you a clear sense of the flavour, aroma, and mouthfeel you can expect from our Renacimiento, Extra Virgin Hojiblanca Olive Oil (EVOO).

Flavor Profile

  • Fruity: Bright green olive notes with hints of almond, freshly cut grass, and tomato leaf.
Bitter: Light to medium bitterness, reflecting a naturally high level of antioxidants and polyphenols.
Pungent: A gentle peppery kick that adds vibrancy without overpowering.

Aroma

  • Freshly crushed olives with subtle herbal and green-fruit aromas.
Nuances of apple, artichoke, or green almond may emerge depending on the harvest.

Mouthfeel & Finish

  • Smooth and well-balanced, with a lingering, slightly spicy finish.

What’s our favorite way to enjoy the oil you ask?

Well, no grand recipes here — just thin slices of fresh bread, generously soaked and happily savored.
